Instructions

Preheat oven to 350°F. Melt butter and oil in a large Dutch oven over medium heat. Add onions and cook 6–8 minutes until soft; transfer to a bowl.
02. Brown beef in batches until golden on all sides, about 8–10 minutes per batch.
03. Return onions and beef to the pot. Add half the garlic and blue fenugreek;
cook 1 minute. Stir in tomatoes, broth, salt, and jalapeños. Add tied cilantro
sprigs.
04. Cover and bake for about 2 hours, stirring occasionally, until beef is fork-tender. Skim off excess oil.
05. Remove cilantro sprigs. Stir in remaining garlic and fresh herbs. Let rest 5
minutes before serving.
