Strawberry
Pancakes
Ingredients:
1.5 cups all-purpose flour
3 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 1/4 cups milk
1 egg
3
tablespoons
melted
butter
1 teaspoon vanilla extract
1 cup fresh strawberries,
diced (plus extra for
topping)
Directions:
Mix Dry Ingredients: In a large bowl, sift
together the flour, baking powder,
sugar, and salt.
Combine Wet Ingredients: In another
bowl, whisk together the milk, egg,
melted butter, and vanilla extract.
Make Pancake Batter: Pour the wet
ingredients into the dry ingredients. Stir
until just combined; the batter may be
slightly lumpy. Gently fold in the diced
strawberries.
Heat a Skillet: Heat a lightly oiled
griddle or frying pan over medium-high
heat. Pour or scoop the batter onto the
griddle, using approximately 1/4 cup for
each pancake.
Cook Pancakes: Brown on both sides
and serve hot. Pancakes should be
flipped when bubbles form and the
edges are slightly dry.
Serve: Top with additional fresh
strawberries and whipped cream or
drizzle with maple syrup.
